Tomato Rice

Yet another easy dish from left over cooked rice..



Ingredients:
  1. Cooked white rice- 2 small cup
  2. Tomato- 2 Big
  3. Onion- 2
  4. Green chilli- 2
  5. Cumin seeds- 1 Tbs
  6. Mustard seeds- 1 Tbs
  7. Turmeric powder- 1/2 Tbs
  8. Red chilli powder- 2 Tbs
  9. Garam masala- 1 Tbs
  10. Coriander leaves- handful
  11. Curry leaves-1 spring
  12. Oil
  13. Salt

Procedure:

Finely chop the onions and tomatoes and keep aside. Apply salt to the rice and keep aside.
In a wok add little oil, allow the cumin, mustard, green chilli and curry leaves to splutter. Add the onions and fry in medium flame till it turns soft / pinkish in color.
Add the tomatoes and cook till it turns mushy.
Add red chilly powder, garam masala, turmeric powder and cook for few mins.
Finally add the cooked rice, sprinkle water and carefully mix all the masalas. Garnish with coriander leaves. This should take 10 mins. (If the rice is sticking to the pan add little oil).

Ribbon cake

This cake has a blend of two different flavors, dominating being the flavor of strawberry.. You can play with other essence of your choice.



Ingredients:
  1. Egg- 2
  2. All purpose flour- 2 glass
  3. Sugar- 2 1/2 glass 
  4. Tovin essence- 1Tbs
  5. Vanilla essence- 1/2 Tbs
  6. Baking soda- 2 Tbs
  7. Milk- 1/4 glass
  8. Butter / oil- 250 gms /1 glass
  9. Roasted Almonds
  10. Raisins
  11. salt- pinch

Procedure:

To make the Strawberry flavored cake batter:

In a bowl break open one egg add little salt and whisk it properly till it turns frothy.
In the mixer powder the sugar. Add a glass of powdered sugar, all purpose flour, 1 Tbs baking powder. Mix all these evenly with the whisked eggs. Add melted butter, little milk and tovin essence.

To make Vanilla flavored cake batter:

In a bowl break open one egg add little salt and whisk it properly till it turns frothy.
Add all the remaining powdered sugar, all purpose flour, baking powder. Mix all these evenly with the whisked eggs.
Finally add the melted butter, milk and essence and give a good stir.

Grease the cake mold with butter / oil pour the vanilla flavored cake batter, dash it with roasted almonds, raisins. Now slowly pour the strawberry flavored cake batter in a zig zag / Criss cross way. This way you will see a good blended layer of vanilla and strawberry.

Put in the micro wave for about 5-6 mins in the microwave mode. I keep a glass of water in the microwave by this the moisture of the cake with remain intact and cake would be soft and fluffy.
After 5 mins open the microwave door and let the cake rest for a while. Slice the cake when it completely cools down. If you prefer having a crunchy cake microwave for 7 mins.

Babycorn Manchurian




Ingredients:
  1. Baby-corn-1 packet
  2. Capsicum- 2 Big
  3. Onion- 1 Big
  4. Spring onion- 4 to 5
  5. Garlic- 1 pod
  6. Ketchup- tsp
  7. Soya sauce- 2 Tsp
  8. White vinegar- 3 Tsp
  9. Chilly garlic sauce- 2 Tsp
  10. Pinch of sugar
  11. All purpose flour & corn flour- 1:1
  12. Ginger garlic paste- 1 Tsp
  13. Chilly powder- 2 Tsp
  14. Pinch of cooking soda
  15. Salt
  16. Oil.

Procedure:

Cut the baby corns to medium thick round pieces wash and dry on kitchen towel.
In a bowl mix the all purpose flour, corn flour, chilli powder, ginger garlic paste, salt, soda with little water and coat the baby corns and fry them until crisp.

In a pan add little oil add the finely chopped garlics on high flame till they change the color. Add the chopped onion and capsicum continue to fry on high flame for 5-7 mins. Add the fried baby-corns, ketchup, vinegar, soya sauce, chilli garlic sauce, salt and fry on high flame for 10 mins. Finally add the spring onions.

Veg Momos- Steamed & Fried


Ingredients:
  1. Capsicum-2 Big
  2. Carrot- 2
  3. Onion- 2
  4. Soya Sauce- 4 Tbs
  5. Vinegar- 2 Tbs
  6. Chilli garlic sauce- 1 Tbs
  7. Salt

Procedure:

In a pan add little oil, fry the finely chopped veggies on high flame. The veggies should be partially crunchy.
Add the soya sauce, vinegar , salt chilli garlic sauce and stir fry for 2-3 mins. Allow the mixture to cool down.


Dough Ingredients:
  1. All purpose flour (Maida)- 1/2 Cup
  2. Salt
  3. Water- As required

Procedure:

Mix the Maida, salt and water knead to a smooth dough (Dough should be of poori consistency).
Allow the dough to rest for an Hr.

Take small portion of dough and roll to smooth dough balls .With the help of a rolling pin flatten to circles.
Add spoonful of dumpling filling at the center and fold the circle of the dough in half covering the filling, Pinch the edges of the circle to make sure there is no open edges, this should look like a half moon now.
To give better texture, take the fork and press against the edges to form the impression of the fork edges.
Keep a steamer, heat water and place the dumpling over the steamer plates( Brush the momos with oil to avoid sticking to the plate). Steam the momos for 10 minutes.

For fried momos- Place a non stick pan, add little oil and place the steamed momos stir fry till they are slightly fried.
Enjoy with chilli garlic sauce.


Tawa Pulao

One of the option when you have lot of left over cooked rice...



Ingredients:
  1. Cooked rice
  2. Carrot- 2
  3. Cauliflower florets- bowlful
  4. Onion- 1
  5. Tomato-1
  6. Green chillies- 4
  7. Green peas- bowlful
  8. Ginger and garlic paste- 1 Tsp
  9. Red chilli powder- 2 Tsp
  10. Garam masala- 2 Tsp
  11. Cumin powder- 1 Tsp
  12. Cumin seeds- 1 Tsp
  13. Salt

Procedure:

In a non stick pan heat little oil and cumin seeds allow it to splutter. Add all the vegetables, ginger garlic paste and fry in medium flame till they are cooked. To this add red chilli powder, cumin powder, garam masala and sprinkle little water stir and saute for few minutes, then add cooked rice and mix evenly to coat all the masalas, cover and cook for few minutes. Finely add coriander leaves.

Round Pan Cake- (Godu Appo)




Ingredients:
  1. Wheat- 1 glass
  2. Beaten rice- 1fistfull
  3. Coconut- 1/4 cup
  4. Jaggery- 1/2 cup
  5. Cardamon- 2 pod
  6. Salt

Procedure:

Wash the wheat and soak in warm water for few hrs .
Soak the beaten rice separately.
In a blender add the coconut, jaggery, cardamon, Pova and blend to a paste without adding water. Once all the mixture is blended add the wheat, little water and make a paste. Add required water to check the consistency. The batter should be thick but of dropping consistency.
Fermentation process not required.
Heat the pan with small moulds (Appe kaili) add few drops of ghee and pour the batter. Fry both side till golden brown.

If Appe kaili is not available use non stick pan to make dosa instead of appo.

Egg Garlic balls




Ingredients:

  1. Egg- 3
  2. Diced Onion- 2
  3. Finely chopped onion- 1
  4. Capsicum- 1 Big
  5. Garlic- 1 Pod
  6. Soya sauce- 2 Tbs
  7. Vinegar- 2 Tbs
  8. Ketchup- 1 Tbs
  9. Sweet garlic sauce- 1 Tbs
  10. Green chilli- 2
  11. Sugar- 1/2 Tbs
  12. Pepper powder- 1 Tbs
  13. Coriander leaves / Spring onion- handful
  14. Salt


Procedure:

In a bowl break open the eggs and whisk till it turns frothy. Add the salt, pepper powder and keep aside.
Pour the egg mixture into the vessel which is used to make appam. Smear oil and fry on both sides.
In a non stick pan add oil and fry the diced onion, capsicum, garlics, green chilli on high flame. Keep stiring them continuously.
Finally mix all the egg balls, add soya sauce, vinegar, ketchup and chilli garlic sauce and toss it well  on medium flame. Keep stiring continuously for 5-10 mins. Garnish with freshly chopped spring onions / coriander leaves.
